Coconut Dainties are one of those truly old school bikkies that’s being made trendy again as they’re an awesome Gluten Free sweet treat! Bonus is they’re ridiculously easy to make!
Pre-heat oven to 180c & line a tray with baking paper.
Grab your good old Mr Buzzy (aka Stick blender) with the whisk attachment & whisk up 1 egg white to soft peak.
Bung in 2 tablespoons of caster sugar gradually while still whisking until that’s nicely dissolved & the meringue is thick & glossy. You shouldn’t be able to feel any grains of sugar, it needs to be smooth.
Then it’s just a case of gently folding through 1/3 cup of desiccated coconut.
Drop teaspoons of mix on the prepared tray (or you can use a piping bag if that floats your boat) & whack that in the oven for 15 minutes before cooling on a wire rack.
