My easy peasy Chicken & Veggie Bake may not look like much, but oh my goodness, will leave you in food coma heaven!
Whack a couple of tablespoons of Duck Fat in a baking dish & pop that in to pre-heat with the oven to 200c.
Next, just chop up half a dozen potatoes, skin & all, plus 3-4 carrots (but peel those, I know, I know, actual work!) make sure they’re same size, about a centimetre dice is nice.
Grab yourself 500g of chicken thighs to dice those same size as the veggies then season all of it generously with salt & pepper.
The duck fat should be sizzling away nicely by now so very carefully (with your pants on as hubby would say) remove the tray from the oven & simply bung in the lot! Give it a jolly good stir to coat everything in that luscious duck fat & whack it back in the oven for 1.5 hours.
Then wrap your laughing gear around that lot!
