With the cooler weather now upon us, it’s time to bust out our favourite soup recipes in my home.
This hearty Pea & Ham Soup has been handed down to me from my beloved Nan &
is super easy to make.
The night before you want to make this, empty a 500g packet of green split peas into a bowl & cover with water. Leave it on the bench overnight, do not refrigerate them.
Next morning, place a big meaty ham hock (smoked is our preference) into your slow cooker with a wee bit over 1/4 full of water.
Drain the split peas & give them a good, thorough wash before bunging into the slow cooker. Pop the lid on & turn it to low for 8 hours. The secret to using a slow cooker successfully is to never lift that lid during cooking!
Once time is up, carefully lift the lid by tilting it towards you so that the steam escapes safely away & you don’t get a nasty burn on your hand. Fish the bones out of the soup then gently tease apart the meat. Add salt to taste & dig in!
If you don’t have a slow cooker, simply use a large stock pot with the ham hock, water & peas, bring to the boil & then simmer for a few hours.
