A fragrant soup which warmly wraps you up in all the flavours of South East Asia without any of the effort!
Simply perfect for a mid week indulgence.
Firstly, heat a wee splash of oil over a low heat in a saucepan & stir fry an entire jar (230g) of Thai Laksa Paste until the aromas permeate your kitchen & flood your entire home.
Next, bung in a whole can (400ml) of coconut milk & simmer for 5 minutes, stirring every so often.
Meanwhile, cook off some rice noodles as per the packet instructions.
Back to the soup & pour in 2 cups of water along with a tablespoon of fish sauce & bring it all up to a boil.
Whack in some diced fish & stir until they’re cooked through.
Pop the cooked rice noodles into serving bowls, along with some snake beans if they’re in season, & ladle over generous amounts of the steaming hot soup with luscious chunks of fish – devour immediately!
