Spicy Chicken Lasagne

I’ve always been asked what’s the secret that I put into my Lasagne that makes it taste so good – well I’m finally going to tell you!


Don’t be put off by what looks like a lot of work to make a fabuliciouz lasagne that any fancy eatery would be proud of. It’s just 3 simple steps.

Step 1 – The Meat Filling.

Grab a large frypan & heat a good glug of oil in it. Brown off 500g of chicken mince, remembering to season generously with salt & white pepper. Then comes my secret ingredient……an entire jar (300g) of salsa! Just pour it right in there with the chicken & stir it through. This is where you can make it as mild or spicy as you like depending on the salsa you choose to use, whatever floats your boat. Set that aside.

Step 2 – The White Sauce.

In a medium to large saucepan, just melt off 2 tablespoons of butter (use the real stuff so your sauce doesn’t end up oily) over the lowest heat setting possible. When it’s melted, remove it from the heat & add in 2 tablespoons of flour & 1 teaspoon of salt. Stir that really well for a minute & then whack it back on the lowest heat whilst still stirring constantly for about another minute. Next, just start to slowly pour in 2 & 1/2 cups of milk, never stop stirring! When it’s all in, turn up to a medium heat to start to thicken the sauce. When you’ve got the consistency you like, set aside.

Step 3 – Assembly

This is the fun bit. In the bottom of your lasagne baking dish, plop in a ladle of the white sauce & spread it out to cover the surface. Next comes a scoop of the meat filling, once again, spread it out. Then comes a sprinkling of mixed dried herbs & also Oregano before throwing on an obscene amount of grated cheddar cheese. Top with lasagne sheets & do it all again! When you reach the last layer, don’t add any more lasagne sheets, but instead crown the cheddar off with parmesan cheese as well!

Now you’re ready for the Grand Finale!

Whack that into a 180c oven for 40 minutes before wrapping your laughing gear around that tasty lot!
