Coffee Granita

A sophisticated treat for the grown ups.

With the warmer weather approaching, this just may be the way forward for coffee lovers to maintain their caffeine levels.

First, place a metal baking tray in the freezer to get all lovely cold.

Next, make a strong cup of espresso coffee.

Then, bung said coffee into a small saucepan along with 200g of caster sugar. Dissolve the sugar over a low heat but do not take it beyond drinking temperature.

Finally, pour mixture onto cold tray from freezer & whack it back in there for 20 minutes after which time you want to remove often to stir through with a fork.

The Granita is ready when all the liquid is gone & it will change colour from dark coffee to a more softer hue (usually 2 – 3 hours).
