Watermelon & Honey Slushie

Warmer weather on our mountain top gets us in the mood to party!

Who doesn’t love a refreshingly cool fruity concoction on a warm day?! This combination of juicy watermelon with the sweetness of honey will definitely give your taste buds a tingle! And I’m sure that the booze hounds among you out there will very quickly work out how to sully this one 😉

It’s another easy 3 ingredient wonder of awesomeness from me to lift up your Summer!

Simply start with 6 crushed ice-cubes, add in some roughly chopped watermelon (about 2 cups worth which is a smaller wedge of the melon) & drizzle in a teaspoon of honey (I always use a local raw honey).

Grab good old Mr Buzzy (aka stick blender) to blitz that lot into a fabuliciouzly cool slushie!

Finding Me

Every storm in your life is followed by a Rainbow.

After a long absence, I am back! I would like to thank each of you for not giving up on my return & to the new people who’ve joined us on our journey here in this past month, seeing new followers during such a hard time was a beautiful ray of light which spurred me on.

In this past month, Hubby’s health has deteriorated. Thankfully his heart is fit, strong & undamaged. Unfortunately the same can not be said about his lungs.

He has suffered for many years with recurring pneumonia & frequent lung collapses. During all his recent testing, medical teams have discovered abnormalities inside his lungs. He struggles to breathe & is finding it increasingly difficult to do things that we formally took for granted. He is now undergoing testing for Lymphoma (Lung Cancer). Whilst neither of us have ever smoked, he was exposed to some pretty nasty chemicals during his aviation career. The doctor’s tell us we are at the start of something – we just need to figure out what.

With everything happening between Hubby & Mini Me, I was quite taken aback when one of the teams expressed concern for my well being. They were all in total agreeance that I am burnt out. After much encouragement I have been persuaded to start looking after me so that I can better look after them. A respite from my daily grind, as it were. So I am back with my passion for the kitchen in reinvigorating this blog & I have also enrolled in something I’ve been wanting to do since before Mini Me was born! I am about to begin Belly Dancing classes!

This coming year is going to be hard, we’ve no doubts about that. We have a battle to prepare for & we will fight! And we will be fine.

 

Taking Mini-Me to the Extreme!

What a time we’ve had of it! I think Hubby & Mini-Me were tag teaming to see who could break me first!

Hubby is doing better after his heart attack but still a way to go on his recovery. The problem arose after an accident in our digger whilst at work. He sustained a broken rib & bruised kidney. Unfortunately, somehow, this led to an infection, Influenza A, pneumonia & all resulted in a heart attack. We choose to see the positive in this, however, for the heart attack has exposed a rather serious heart condition which we can now make appropriate lifestyle adjustments for.

Meanwhile, Mini-Me dropped weight rapidly into a critically low area, ringing alarm bells! Her Nutrition was good with adequate calorie intake for her ballet training so the hunt was on to solve this mystery ASAP!

Every parent fears the word Leukaemia. We were so incredibly relieved when her test results proved negative…..but then what was causing her weight to free fall where no matter what the doctors did, they could not stop it?!

Never underestimate having a bloody good Paediatrician on your side.

Several tests later & we have a break through – Coeliac Disease!

Thank goodness I am already all over this (like Hubby on a cupcake!) having it myself. I recall though, several years ago now, the almighty learning curve of the Gluten Free Diet! I am just so enormously grateful that I got to trial & error on myself instead of my precious child. It was actually such an incredible relief to hear the words Coeliac Disease over the alternative!

Now that they are both on the path back to good health & I’ve been medically ordered that I am NEVER allowed to EVER get sick myself with these two, I have finally had time to breathe. That is always a dangerous thing for me as then I have the time to think!

When Hubby had his heart attack, I became suddenly aware of how truly precarious my privileged life as a Homeschooling House Wife really is. This is the lifestyle that we worked so hard to place ourselves in a position to achieve & maintain before having Mini-Me. Yet it could all be snatched away from us in an instant.

I confided my feelings to my beautiful Ballet Mum tribe. They’re such an extremely supportive & truly empathetic group of ladies. Upon the realisation that reigniting my former career would be unsustainable, a suggestion was made for me to return to study. Train for something new, something that I love, something that is meaningful to me, something that will restore my financial confidence.

Searching for my great unknown, I stumbled across a piece of advice that said something like Find Your Purpose – we’ve all seen this cliche emblazoned everywhere, but what made this one different to grab my attention was that he went on in the video to actually say HOW to find your purpose! Pay attention to what you always think about, always watch, always read, always listen too. I don’t think I need to issue any prizes to anyone for guessing what my brain is obsessed with! FOOD!

But……as well as food, I am equally invested in my family’s health! So not so quick there on the old Culinary School route peeps 😉

I’m leaning towards finding something to do with Food, Nutrition, Health, Elite Performance & Optimum Clean Living. I just haven’t found it yet, but I will.

Korean Chilli Chicken

Succulent chicken marinated with a fabuliciouz depth of flavour leaving a  wonderfully warm mouth tingle.

This wee number has absolutely impressed hubby & I with it not just being about blow your head off heat, but rather a real layering effect of flavour.

Grab yourself a bowl & bung in 500g of stir fry chicken strips before seasoning well with salt & ground black pepper.

Next, whack in the juice of a lime & 1 & 1/2 tablespoons of Korean Chilli Paste – this is our new discovery at the local Asian grocer & it’s seriously good stuff!

Make sure you give it all a jolly good mix to coat that chook really well then set aside for half an hour to marinade. The lime juice will start to ‘cook’ the chicken so this is not one to leave for too long.

Get your wok to a stonking hot heat with a wee splash of oil & toss the marinated chicken through to cook.

It’s really that easy!

Fish Bites

The secret to great food is to not do a lot to it!

We’ve just returned from holidays & had the most amazing time away! We are relaxed, revived & refreshed as only a break at the beach can provide!

Whilst we were there, we were so fortunate to find ourselves alongside some extremely accomplished fishermen. Mini-Me delighted in seeing their catch each day with the incredible variety of different species they hauled in.

One day, they snagged themselves two very impressive Kingfish! Then the most beautifully generous thing happened, they handed us a bag of their freshly caught Kingfish! I mean, WOW, right?!?!?! Unless you’re a fisher person yourself, you just don’t get fish that fresh!

Now something that I’ve always done, no matter what the produce & is my Top Tanz Tip for you all today is  –

Always ask the Farmer/Hunter/Fisherman/Gatherer HOW they cook it!

You will be absolutely blown away with the culinary knowledge that will be so freely given to you.

Our lovely fishermen advised that with this particular fish, the best course of action was to simply season some flour with salt & pepper, toss the fish through it & then pan fry in some hot oil quickly until they’re cooked through.

Seafood is the most convenient of all the foods to cook as they have a built in timer to tell you when they’re ready! When seafood changes colour from see through translucent to a lovely opaque white, It’s Chompin Time!

Spiced BBQ Chicken Thighs

This amazing marinade brings a fabuliciouz taste of the Orient into your backyard barbie!

 This is a super quick & easy marinade that is sure to spice up your next BBQ! Team it with chicken, pork, lamb or fish for something a wee bit different to the standard snags & burgers.

Grab yourself a mixing bowl & bung in 1 cup of plain yoghurt, 3 tablespoons of your favourite curry paste (I use Paeneng), 2 tablespoons of garam masala, 2 teaspoons of salt, the juice of 2 limes & 1 teaspoon of raw sugar. Give that lot a jolly good mix then whack in your meat to coat & pop in fridge to marinade for about an hour (remember that the lime juice is going to start the cooking process so you don’t want to leave it too long).

Hand them over to the man at the alter of burnt offerings (aka BBQ) to cook on a medium heat with some tender flame kisses.

Sushi Rolls

They’re quick, they’re healthy & they’re fabuliciouz!

Whipping up this Food Court favourite at home is easier than you may think!

Start with the rice – you’ll need to bung 1 cup of cooked rice into a nice shallow bowl before popping over 3 tablespoons of Sushi Seasoning, you can find this in the Asian section of your local supermarket these days! Use a wooden spoon to gently fold the seasoning through the rice before allowing it to cool to room temperature. This sushi seasoning is the secret ingredient! You know how when you buy these rolls at the shops there’s always that certain special taste that you can’t quite put your finger on???? Well this is it! It also gives the rice that absolutely essential sticky consistency too.

Next, you’ll need a bamboo sushi mat, also readily available in the Asian aisle of supermarkets these days.

Lay your bamboo sushi mat flat on your bench before taking out a sheet of Nori Seaweed (how good is it now that we can get all these wonderfully exotic ingredients so easily?!?!). Lay the Nori sheet with the shiny smooth side down against the matt as this will be your outer presentation side so you want the rough, dull bit on the inside.

Spread the sticky rice in a layer all over the Nori sheet but make sure you leave a 2cm gap at the end furthest from you.

Next comes your fillings! This is where you can let your imagination run wild or simply take inspiration from the menu at your local take out.

In a narrow strip, closest to you, start layering. Just use a couple of ingredients, as the Japanese do, which work really well together. In the picture I have used curried egg & chicken, but also think about avocado, cucumber, tuna, wasabi, ginger, duck – all the classics!

Then you need to use the bamboo mat to lift the fillings end, which is the closest to you, up & over ensuring a nice tight roll. Wet your fingers to moisten the 2cm strip you’ve left at the far end of the nori seaweed & lift up & over again with the mat to seal your roll. Squeeze to ensure a nice tight roll that won’t fall apart.

Remove the roll from the mat by simply opening the bamboo mat up again before transferring the roll onto a cutting board. Finally, because the rice is so sticky, you will need to wet a very sharp knife to slice the roll into bite sized pieces.

Curried Egg Filling

Aussies of my generation will well remember the good old Curried Egg Sanga in the school lunchbox!

Nostalgic love or Dear Lord let it go?!

Nothing could be simpler than this classic filling! Use it in sandwiches, rolls, wraps or even sushi!

Use a fork to smash up a hard boiled egg before adding in a tablespoon of whole egg mayonnaise, a teaspoon of curry powder (naturally, I use the good old Keens!) then season well with salt & pepper.

Mix it all together & voila! You’re ready to spread!

Layered Parfait Dessert

Sensual Chocolate Caviar adorns crunchy Pistachio Parfait perched atop smooth Port Wine Jelly.

This sumptuously decadent dessert is all about the contrasting textures as you dig down through the flavour filled layers with every bite exploding in your mouth & it’s not as naughty as it looks.

Start off by simply setting your Port Wine Jelly according to the packet instructions in some very pretty glasses, leaving to set in the fridge overnight.

Next, turn your attention to the scrumptious pistachio parfait. Open an 80g packet of pistachio nuts & chop them up fairly finely. Bung 500ml of Organic Vanilla Bean Yogurt into a mixing jug before throwing in the chopped nuts & blitz away with good old Mr Buzzy (aka stick blender) to get it all nicely incorporated. Pour into a container & whack into the freezer to set.

To make Chocolate Caviar, soak 1/2 cup of Tapioca Pearls in 2 cups of milk for an hour then pour into a saucepan & bring to the boil. Reduce the heat to a simmer whilst stirring continuously, watching for the pearls to turn translucent, usually takes about 10-15 minutes or so. Take it off the heat & add 1/2 cup of a good quality chocolate syrup before leaving to soak in the fridge overnight for the pearls to absorb all that chocolatey goodness.

When ready to serve, simply plop the pistachio parfait on top of the set port wine jelly & crown with the chocolate caviar.

It’s a wee bit of an impressive number, even if I do say so myself.
