Berry Pops

Looks Naughty, but it’s actually Nice.

A fun way to start your day with a healthy breakfast treat.

This is a definite Kids in the Kitchen recipe where Mini-Me simply loves to help out, making her breakfast icy-pops. They’re fun, They’re fast & They’re absolutely fabuliciouz!

But these 3 ingredient wonders aren’t just for kids! This is also a fantastic way for you grown-ups to get a healthy start to your busy days too when you’re on the run.

Nothing could be easier! Simply pop into a mixing jug 250g of any type of delicious berry that floats your boat & give it a good old whazz up with Mr Buzzy (aka stick blender), before decanting 340g of Coconut Yoghurt into the jug, along with a teaspoon of local raw honey. Give it another jolly good mix up, then pour into awaiting icy pop moulds & pop into the freezer to set.

Now you have no excuses to not get that great, healthy start to your day!

Tanz Tip – I have allergies & with having moved around the country so much, the very first thing I do in a new area is to seek out a jar of local raw honey! It’s the quickest way to expose my body to the local pollens & it’s absolutely fabuliciouz too.

Roasted Tomato Soup

A celebration of Summer bursting with the lively flavours of

sun-kissed Tomatoes, tongue-tingling Capsicums & soul-soothing Garlic.

This soup is a guilt free pleasure & we feel the goodness pulsating nourishment  throughout our bodies with every fabuliciouz spoonful! I hope your Fam-Bam loves it just as much as mine does.

Begin simply by quartering 1.5 kg of tomatoes & spreading those evenly in a roasting dish. Drizzle over 1 tablespoon of olive oil along with 1 tablespoon of balsamic vinegar. Season ever so generously with salt, pepper & dried thyme.

Next, squeeze a whole head of garlic into a corner of the pan & just set it aside for a moment.

Grab a baking tray & onto that goes 2 red capsicums which you’ve cut in half & removed the seeds & bitter white pith from. Make sure you place them skin side up on the tray before drizzling with a wee splash of olive oil as well.

Pop both the pan & the tray into a 180c oven for half an hour to roast.

Once done, place the capsicums into a bowl & cover them with cling film to sweat. Set that aside.

Into a big pot or saucepan, place the roasted tomatoes along with all those luscious juices from the pan. Just make sure you take that head of garlic out first!

Meanwhile, return to your capsicums as they should be done by now. Remove the cling film & the skin on all the capsicum halves should easily peel away, then into the pot they go! Remember to pour in any collected juices too – that’s all flavour!

Start to break apart your garlic head & squeeze all that soft yumminess out of the skins & into the pot!

Pour in 1 litre of chicken stock & get that on to the heat. Bring the soup to a boil & then simmer away for 15 minutes.

Finally, drag out good old Mr Buzzy (aka stick blender) to blend your soup smooth before one more go at the salt & pepper, seasoning to your taste.

Tanz Tip ~ To keep my meal completely Gluten Free, I like to serve Mini Pappadum’s alongside my soup so that I still get the crunch factor without the crusty bread.

This Greek garlic potato dip is simply perfect served with refreshing cucumber sticks or sweet cooked prawns.

Skordalia is, quite honestly, such an easy & fabuliciouzly different dip to add WOW factor to any table. It’s lovely warm but you can make this the day before you want to serve it & just keep it well covered in the fridge.

Start by steaming 500g worth of peeled & chopped potatoes until they’re lovely & tender before giving them a good mash up.

Then add in 4 teaspoons of minced garlic (or 4 cloves if you’re prepared to crush them yourself) along with 60g of almond meal. Beat that lot really well with your wooden spoon to combine.

This recipe is going to give you a great workout for your ‘angel wing’ arms.

Slowly pour in 2/3 cup of really good quality extra virgin olive oil in a thin stream whilst beating to get a gorgeous thick & smooth consistency.

Finally, add in 2 tablespoons of white wine vinegar, a tablespoon worth of finely chopped fresh parsley & season ever so generously with salt & black pepper. Keep beating until it’s a beautifully luscious mash-like dip.

Gluten Free Pizza Base

A Gluten Free Pizza Base that you actually want to eat!

Sometimes the absolute BEST recipes can be found on the back of a packet, tin or jar! I always take the time to scan over a label before placing in the bin & this one is definitely a WINNER!

Lovely & crisp without any of the gooey dramas that have befallen me when trying to simply substitute GF Flour instead of wheat ones in standard recipes. I now have my GF Pizza Base & I am happy to share it with you!

Best of all, you are simply not going to believe how easy it is!

Grab a mixing bowl & in goes 1.5 cups of Soy Flour, 3 eggs, 1/4 cup of sour cream, 1/3 cup of soda water along with a teaspoon of salt for seasoning. Give that lot a jolly good stir to form a thick batter.

Next, spread it out thinly over a greased oven tray & pop into a 180c oven for 15 minutes so that it sets & starts to get lovely & crisp.

Pull the base out of the oven, add your favourite toppings & pop it back into the oven to bake until it’s gloriously golden & cheese pull worthy!

Strawberry Chips

Celebrate the arrival of Summer in Australia with these

Sweet pops of naturally healthy goodness.

With all the excesses of Festive Feasting, this is a lovely wee recipe to let you feel good about indulgence again. Whether you enjoy them on their own as a sweet snack or use them as garnish to punctuate your other luscious treats, they are sure to be a winner!

The beauty of these Strawberry Chips is just how EASY they are to make too! You get a lot of bang for your buck on this one.

Simply chop the tops off your strawberries before halving or quartering, whichever size floats your boat. Then lay them on baking paper lined trays & pop them into a 100c oven for 3 hours.

That’s it!

Told you this one was super easy!

Watermelon & Honey Slushie

Warmer weather on our mountain top gets us in the mood to party!

Who doesn’t love a refreshingly cool fruity concoction on a warm day?! This combination of juicy watermelon with the sweetness of honey will definitely give your taste buds a tingle! And I’m sure that the booze hounds among you out there will very quickly work out how to sully this one 😉

It’s another easy 3 ingredient wonder of awesomeness from me to lift up your Summer!

Simply start with 6 crushed ice-cubes, add in some roughly chopped watermelon (about 2 cups worth which is a smaller wedge of the melon) & drizzle in a teaspoon of honey (I always use a local raw honey).

Grab good old Mr Buzzy (aka stick blender) to blitz that lot into a fabuliciouzly cool slushie!

Finding Me

Every storm in your life is followed by a Rainbow.

After a long absence, I am back! I would like to thank each of you for not giving up on my return & to the new people who’ve joined us on our journey here in this past month, seeing new followers during such a hard time was a beautiful ray of light which spurred me on.

In this past month, Hubby’s health has deteriorated. Thankfully his heart is fit, strong & undamaged. Unfortunately the same can not be said about his lungs.

He has suffered for many years with recurring pneumonia & frequent lung collapses. During all his recent testing, medical teams have discovered abnormalities inside his lungs. He struggles to breathe & is finding it increasingly difficult to do things that we formally took for granted. He is now undergoing testing for Lymphoma (Lung Cancer). Whilst neither of us have ever smoked, he was exposed to some pretty nasty chemicals during his aviation career. The doctor’s tell us we are at the start of something – we just need to figure out what.

With everything happening between Hubby & Mini Me, I was quite taken aback when one of the teams expressed concern for my well being. They were all in total agreeance that I am burnt out. After much encouragement I have been persuaded to start looking after me so that I can better look after them. A respite from my daily grind, as it were. So I am back with my passion for the kitchen in reinvigorating this blog & I have also enrolled in something I’ve been wanting to do since before Mini Me was born! I am about to begin Belly Dancing classes!

This coming year is going to be hard, we’ve no doubts about that. We have a battle to prepare for & we will fight! And we will be fine.

Taking Mini-Me to the Extreme!

I’m back! Did you miss me?

What a time we’ve had of it! I think Hubby & Mini-Me were tag teaming to see who could break me first!

Hubby is doing better after his heart attack but still a way to go on his recovery. The problem arose after an accident in our digger whilst at work. He sustained a broken rib & bruised kidney. Unfortunately, somehow, this led to an infection, Influenza A, pneumonia & all resulted in a heart attack. We choose to see the positive in this, however, for the heart attack has exposed a rather serious heart condition which we can now make appropriate lifestyle adjustments for.

Meanwhile, Mini-Me dropped weight rapidly into a critically low area, ringing alarm bells! Her Nutrition was good with adequate calorie intake for her ballet training so the hunt was on to solve this mystery ASAP!

Every parent fears the word Leukaemia. We were so incredibly relieved when her test results proved negative…..but then what was causing her weight to free fall where no matter what the doctors did, they could not stop it?!

Never underestimate having a bloody good Paediatrician on your side.

Several tests later & we have a break through – Coeliac Disease!

Thank goodness I am already all over this (like Hubby on a cupcake!) having it myself. I recall though, several years ago now, the almighty learning curve of the Gluten Free Diet! I am just so enormously grateful that I got to trial & error on myself instead of my precious child. It was actually such an incredible relief to hear the words Coeliac Disease over the alternative!

Now that they are both on the path back to good health & I’ve been medically ordered that I am NEVER allowed to EVER get sick myself with these two, I have finally had time to breathe. That is always a dangerous thing for me as then I have the time to think!

When Hubby had his heart attack, I became suddenly aware of how truly precarious my privileged life as a Homeschooling House Wife really is. This is the lifestyle that we worked so hard to place ourselves in a position to achieve & maintain before having Mini-Me. Yet it could all be snatched away from us in an instant.

I confided my feelings to my beautiful Ballet Mum tribe. They’re such an extremely supportive & truly empathetic group of ladies. Upon the realisation that reigniting my former career would be unsustainable, a suggestion was made for me to return to study. Train for something new, something that I love, something that is meaningful to me, something that will restore my financial confidence.

Searching for my great unknown, I stumbled across a piece of advice that said something like Find Your Purpose – we’ve all seen this cliche emblazoned everywhere, but what made this one different to grab my attention was that he went on in the video to actually say HOW to find your purpose! Pay attention to what you always think about, always watch, always read, always listen too. I don’t think I need to issue any prizes to anyone for guessing what my brain is obsessed with! FOOD!

But……as well as food, I am equally invested in my family’s health! So not so quick there on the old Culinary School route peeps 😉

I’m leaning towards finding something to do with Food, Nutrition, Health, Elite Performance & Optimum Clean Living. I just haven’t found it yet, but I will.

Korean Chilli Chicken

Succulent chicken marinated with a fabuliciouz depth of flavour leaving a  wonderfully warm mouth tingle.

This wee number has absolutely impressed hubby & I with it not just being about blow your head off heat, but rather a real layering effect of flavour.

Grab yourself a bowl & bung in 500g of stir fry chicken strips before seasoning well with salt & ground black pepper.

Next, whack in the juice of a lime & 1 & 1/2 tablespoons of Korean Chilli Paste – this is our new discovery at the local Asian grocer & it’s seriously good stuff!

Make sure you give it all a jolly good mix to coat that chook really well then set aside for half an hour to marinade. The lime juice will start to ‘cook’ the chicken so this is not one to leave for too long.

Get your wok to a stonking hot heat with a wee splash of oil & toss the marinated chicken through to cook.

It’s really that easy!

Fish Bites

The secret to great food is to not do a lot to it!

We’ve just returned from holidays & had the most amazing time away! We are relaxed, revived & refreshed as only a break at the beach can provide!

Whilst we were there, we were so fortunate to find ourselves alongside some extremely accomplished fishermen. Mini-Me delighted in seeing their catch each day with the incredible variety of different species they hauled in.

One day, they snagged themselves two very impressive Kingfish! Then the most beautifully generous thing happened, they handed us a bag of their freshly caught Kingfish! I mean, WOW, right?!?!?! Unless you’re a fisher person yourself, you just don’t get fish that fresh!

Now something that I’ve always done, no matter what the produce & is my Top Tanz Tip for you all today is  –

Always ask the Farmer/Hunter/Fisherman/Gatherer HOW they cook it!

You will be absolutely blown away with the culinary knowledge that will be so freely given to you.

Our lovely fishermen advised that with this particular fish, the best course of action was to simply season some flour with salt & pepper, toss the fish through it & then pan fry in some hot oil quickly until they’re cooked through.

Seafood is the most convenient of all the foods to cook as they have a built in timer to tell you when they’re ready! When seafood changes colour from see through translucent to a lovely opaque white, It’s Chompin Time!
